Boil, chill, and peel
- Place the large eggs in a pot and cover with cold water. Bring to a boil over high heat (around 212°F/100°C), watching for rolling bubbles.
- Cover the pot, remove from heat, and let the eggs stand for 12 minutes. Visual cue: egg whites should look fully set when you peel one to check.
- Transfer the eggs to an ice bath to chill, then peel. Visual cue: chilled shells slip off more cleanly for smooth halves.
Make the filling
- Halve the eggs lengthwise and remove the yolks into a mixing area. Keep the egg white halves intact for piping.
- Mash the yolks with mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper until smooth. Visual cue: filling should be thick but pipeable with no dry yolk bits.
Decorate and serve
- Pipe the filling into the egg whites, forming a tall mound. Visual cue: each mound should hold its shape.
- Press 4 candy corn pieces into the back of each egg to make tail feathers. Visual cue: candy corn should fan outward like a turkey tail.
- Add a bell pepper beak and two candy eyes to the front of each mound. Visual cue: eyes sit slightly above the beak for a turkey-face look.
- Chill until serving. Visual cue: keep the decorations crisp and the filling firm before taking bites.
Notes
For the smoothest filling, mash the yolks thoroughly before mixing in the mayonnaise so the texture stays creamy (not grainy). Refrigerate deviled eggs in a covered container for up to 2 days; assemble turkey details just before serving if possible for the cleanest candy corn look. Freezing is not recommended due to texture changes in the egg whites. For a lighter option, use light mayonnaise in the filling—start with the same quantity and adjust to keep it pipeable.
