Ingredients

6-can chicken taco soup
  • 2 can (12.5 oz) canned chicken drained and shredded
  • 1 can (15 oz) black beans drained
  • 1 can (15 oz) corn drained
  • 1 can (10 oz) Rotel diced tomatoes with green chiles
  • 1 can (14 oz) chicken broth
  • 1 packet (1 oz) taco seasoning
  • 1 ranch packet optional
  • 1 jalapeños optional
  • 1 lime juice optional
  • 1 sour cream for topping
  • 1 shredded cheddar for topping
  • 1 tortilla chips for serving
  • 1 cilantro for topping
  • 1 lime for topping

Equipment

  • 1 Dutch oven

Method

Prep and combine
  1. Open all six cans, drain the chicken, beans, and corn, and shred the chicken.
  2. Add all canned ingredients and the taco seasoning packet to a large Dutch oven.
Simmer
  1. Bring the pot to a boil over medium-high heat, stirring to combine everything.
  2. Simmer for 10-12 minutes, stirring once or twice, until heated through and flavors meld.
Finish and serve
  1. Stir in lime juice and adjust seasoning to taste, adding optional ranch packet or jalapeños if you want extra kick.
  2. Serve immediately with sour cream, shredded cheddar, tortilla chips, and cilantro, adding extra lime to finish if desired.

Notes

For the quickest texture, drain the beans and corn well so the soup doesn’t get watery. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently on the stove or microwave. Freezing: yes, freeze the soup base without toppings for up to 3 months and add fresh toppings after thawing. If you want a dairy-free version, skip the sour cream and cheese and use avocado or dairy-free sour cream instead.
