Ingredients

Chicken Taco Soup Base
  • 1.5 lb chicken breast Cooked and shredded
  • 2 can (15 oz) corn Use canned corn (15 oz each) or substitute fresh corn kernels
  • 1 can (15 oz) black beans Drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup chicken broth
  • 1 tsp cumin
  • 0.5 cup heavy cream Optional for creaminess
Toppings
  • 1 sour cream For serving
  • 1 shredded cheddar For serving
  • 1 tortilla chips For serving
  • 1 lime wedges For serving
  • 1 cilantro For serving
  • 1 avocado For serving

Equipment

  • 1 Dutch oven

Method

Simmer and shred the chicken
  1. In a Dutch oven, simmer the chicken breast in 4 cups chicken broth with taco seasoning for 18-20 minutes, until the chicken is cooked through and tender. Visual cue: the broth should gently bubble while the chicken turns opaque and easily pulls apart.
  2. Remove the chicken from the pot and shred it. Visual cue: the shredded pieces should look fibrous and ready to return to the soup, and reserve the seasoned broth in the pot.
Build the soup and simmer
  1. Return the seasoned broth to the pot, then add corn, black beans, Rotel tomatoes, diced tomatoes, ranch dressing mix, and cumin. Stir just until combined so the spices and tomatoes are evenly distributed.
  2. Return the shredded chicken to the pot, bring the soup to a boil, then simmer for 10 minutes. Visual cue: the soup thickens slightly and the flavors meld as small bubbles break the surface.
Finish and serve
  1. If using heavy cream, stir it in and simmer for 3 more minutes. Visual cue: the broth turns smoother and slightly creamier in color and texture.
  2. Season to taste with salt and add a squeeze of lime. Visual cue: the lime brightens the aroma and balances the richness just before serving.
  3. Serve hot and top each bowl with sour cream, shredded cheddar, tortilla chips, lime wedges, cilantro, and avocado. Visual cue: toppings should sit visibly on top, with tortilla chips adding crunch.

Notes

For best flavor, don’t skip the first simmer—cooking the chicken in seasoned broth keeps the meat juicy and flavors the base. Store leftovers in an airtight container in the refrigerator up to 4 days; reheat gently on the stovetop or microwave. Freezing is not ideal because dairy can break—if you want to freeze, hold back the heavy cream until reheating. For a lighter version, replace heavy cream with evaporated milk or omit it entirely for a thinner broth.
