  • 0.75 cup unsalted butter softened
apple butter
  • 0.5 cup apple butter
brown sugar
  • 0.75 cup brown sugar packed
granulated sugar
  • 0.25 cup granulated sugar
  • 3 tbsp granulated sugar for rolling
egg
  • 1 egg
vanilla extract
  • 1 tsp vanilla extract

Method
 

Prepare and mix
  1. Preheat the oven to 375F, then line sheet pan(s) with parchment for easy release and cleanup.
  2. Whisk together all-purpose flour, baking soda, cinnamon, nutmeg, allspice, and salt until evenly combined and there are no visible flour pockets.
  3. Beat unsalted butter, apple butter, brown sugar, and granulated sugar until combined and fluffy, with a lighter color and smoother texture.
  4. Add the egg and vanilla extract, then beat until the mixture looks uniform and glossy.
  5. Fold in the flour mixture until just combined; stop when you no longer see dry streaks and the dough looks soft.
Chill and shape
  1. Refrigerate the dough for 30 minutes if it feels sticky, until it firms up enough to scoop.
  2. Mix granulated sugar and cinnamon for rolling, then scoop dough into 1-1/2 tablespoon balls and roll each ball to coat the surface.
Bake and finish
  1. Bake at 375F for 10-12 minutes, until the cookie edges are set and the centers still look slightly soft.
  2. Drizzle with salted caramel while the cookies are warm for melt-in flavor, then cool for 5 minutes on the pan before moving.
