Ingredients
Method
Make the cinnamon sugar rim
- Mix the sugar and ground cinnamon on a small plate until evenly combined, with a warm brown color.
- Wet the rims of the flutes with apple cider, so a thin coating clings around the edge.
- Dip each wet rim into the cinnamon-sugar mixture and set the flutes aside until the rim looks fully coated.
Build the mimosas
- Fill each flute one third full with chilled apple cider, leaving room at the top for the sparkling wine.
- Top each flute with champagne or prosecco, stopping when the foam rises close to the rim.
- Garnish each drink with an apple slice and a cinnamon stick, then serve immediately.
Notes
For the cleanest rim, chill the flutes briefly before dipping and keep both the apple cider and sparkling wine cold to reduce fizz loss. Store any leftovers covered in the refrigerator for up to 24 hours, but note they will go flat—best assembled right before serving. Freezing is not recommended. For a lower-sugar option, use a sugar substitute measured for cup-for-cup sweetness when mixing the cinnamon rim.
