Ingredients

Puff pastry and brie
  • 1 sheet puff pastry thawed
  • 8 oz brie wheel
Filling and topping
  • 0.3333333333 cup raspberry or fig jam
  • 2 tbsp pecans chopped
  • 1 tbsp brown sugar
Egg wash and garnish
  • 1 large egg beaten with 1 tablespoon water
  • 1 tbsp water for egg wash
  • 1 fresh rosemary for garnish
Serving
  • 1 crackers for serving
  • 1 apple slices for serving

Equipment

  • 1 sheet pan

Method

Prep
  1. Preheat the oven to 400°F and line a sheet pan with parchment for easy release.
  2. Roll the puff pastry slightly and place the brie in the center.
Assemble en croute
  1. Spread the jam over the brie, then sprinkle with pecans and brown sugar.
  2. Fold the pastry up over the brie, trim excess, and press the seams to seal.
  3. Flip the pastry seam-side down onto the baking sheet and brush with egg wash.
Bake and serve
  1. Bake at 400°F for 22-25 minutes until deep golden brown.
  2. Rest 10 minutes so the cheese sets slightly, then garnish with fresh rosemary.
  3. Serve with crackers and apple slices for dipping.

Notes

For the tightest seal, press seams firmly and keep the pastry seams on the bottom before baking. Store leftovers covered in the fridge up to 3 days; rewarm at 350°F until warmed through. Freezing is not recommended because the pastry texture can soften. For a lighter option, swap in a low-fat brie-style cheese while keeping the same jam and pecans.
