Prep cherries and syrup
  1. Drain maraschino cherries or pit fresh cherries, keeping stems intact. Aim for intact stems and minimal liquid pooling so the syrup later coats evenly.
  2. Combine bourbon, cherry juice, sugar, and vanilla extract in a jar and stir until the sugar dissolves. Continue stirring until the mixture looks clear and uniform, with no grainy sugar at the bottom.
Soak overnight
  1. Add cherries to the jar, making sure they are fully submerged in the liquid. If needed, gently press them down so stems stay above the fruit but the cherry body stays covered.
  2. Seal the jar and refrigerate for at least 24 hours — 48 hours gives the best flavor. Keep it chilled so the cherries stay plump and the alcohol syrup turns glossy and jewel-toned.
Serve
  1. Remove cherries with a slotted spoon, letting excess syrup drip back into the jar. You should see a thick, clinging coating on the fruit as they lift out.
  2. Roll lightly in granulated sugar if desired, then thread onto cocktail picks and serve. Finish with the pick stems up so each bite shows deep red color and a lightly sparkling sugar dust.

Pro tip: Fully submerge the cherry bodies so every piece absorbs the syrup evenly, then drain briefly with a slotted spoon for the best glossy “bomb” look. Refrigerate in a sealed jar up to 5 days; flavor improves over the first 48 hours. Freezing isn’t recommended because cherries soften and the texture gets watery after thawing. For a lower-alcohol option, replace the spirit with additional cherry juice or grenadine and treat it like a sweet cherry marinate rather than spiked cherries.
