Make the cheesecake base
- Beat the softened cream cheese until completely smooth and fluffy, scraping the sides as needed.
- Whisk in the sweetened condensed milk, fresh lemon juice, vanilla extract, and salt until no lumps remain.
- Whip the heavy cream to stiff peaks in a separate bowl.
- Fold the cream cheese mixture into the whipped cream gently until just combined, keeping the airiness.
Layer and swirl
- Layer the mixture into a 9x5 loaf pan, adding graham cracker crumbles and dollops of strawberry jam between each layer for a visible swirl.
Freeze
- Freeze at least 6 hours or overnight until firm enough to scoop.
Notes
For the cleanest swirl, add strawberry jam dollops to each layer right before freezing, and spread graham cracker crumbles evenly so every scoop shows the crumb. Store covered in the freezer for up to 2 weeks; freezer yes (best texture within 2 weeks). For a lighter option, use low-fat cream cheese and reduced-fat sweetened condensed milk, noting the texture may be slightly softer.
