  • 1 cup full-fat cottage cheese Use cold cottage cheese for the creamiest blend.
  • 1 cup frozen pineapple chunks Keep frozen for a soft-serve texture.
  • 2 tbsp honey or agave Sweeten to taste depending on how tart the pineapple is.
  • 1 tbsp lemon juice Brightens flavor and helps balance sweetness.
  • 0.25 tsp vanilla extract Adds the classic Dole Whip aroma.
  • 0.06 tsp salt A small pinch improves overall sweetness balance.

Method
 

Blend the soft serve
  1. Add full-fat cottage cheese, frozen pineapple chunks, honey (or agave), lemon juice, vanilla extract, and salt to a high-powered blender. Blend at high speed until completely smooth.
  2. Continue blending for at least 2 minutes until the texture is silky and there are no cottage cheese lumps. Pause once or twice to scrape down if needed for an even blend.
  3. Taste and adjust sweetness by adding more honey or agave if you want it sweeter. Blend briefly again just until changes disappear.
Pipe and serve
  1. Transfer the blended mixture to a piping bag fitted with a star tip. Pipe directly into cups in a classic Dole Whip swirl.
  2. Serve immediately for the best soft-serve texture. If it thickens, blend briefly for a few seconds and re-pipe.

Notes

For the smoothest, ice-cream-like texture, use frozen pineapple chunks straight from the freezer and blend at high speed until absolutely lump-free. Store leftovers in a sealed container in the fridge up to 1 day (it will firm up as it chills); freezer is not recommended because texture may turn grainy. If you want a lower-sugar option, replace honey/agave with a sugar-free sweetener that measures 1:1 for taste.
