Ingredients

puff pastry
  • 1 sheet puff pastry Thawed
brie
  • 8 oz brie Cut into 24 small cubes
cranberry sauce
  • 0.5 cup whole berry cranberry sauce Use 1 teaspoon per cup
pecans
  • 0.25 cup pecans Finely chopped
honey
  • 1 tbsp honey Drizzle after cooling
rosemary sprigs
  • 1 Fresh rosemary sprigs for garnish Tiny sprigs, for garnish

Equipment

  • 1 sheet pan
  • 1 mini muffin tin

Method

Prepare and bake
  1. Preheat oven to 375F and grease a 24-cup mini muffin tin. This prevents sticking and keeps the pastry cups crisp at the edges.
  2. Roll puff pastry lightly, cut into 24 squares, and press each square into a muffin cup. Keep the pastry flat against the tin so it rises evenly.
  3. Place a cube of brie in each cup and top each with 1 teaspoon cranberry sauce. This ensures brie melts directly into the center of every bite.
  4. Sprinkle chopped pecans over each bite. Distribute evenly so each one gets a crunchy topping.
  5. Bake 13-15 minutes until the pastry is puffed and golden and the brie is fully melted. Look for a visibly risen, browned crust and a molten center.
Finish
  1. Cool 5 minutes in the tin. This sets the filling slightly so the bites hold together.
  2. Drizzle with honey and garnish with rosemary. Serve warm for the meltiest texture.

Notes

Pro tip: thaw the puff pastry fully but avoid warming it too long—cold dough puffs higher. Store leftovers in the refrigerator up to 2 days; reheat in a 325F oven for 5-7 minutes to re-crisp the cups. Freezing is not recommended because puff pastry softens after thawing. For a lighter option, use reduced-fat brie and reduce the honey drizzle to 2 teaspoons total.
