Ingredients

Chicken and soup base
  • 1.5 lb chicken breasts (boneless skinless, added raw)
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup chicken broth
  • 8 oz cream cheese, cubed
  • 0.5 cup heavy cream (added at end)
  • 0.25 salt
  • 0.25 pepper
Toppings
  • 0.5 cup shredded cheddar
  • 0.25 cup sour cream
  • 2 cup tortilla chips
  • 0.5 tsp jalapeños
  • 0.25 cup cilantro

Equipment

  • 1 Dutch oven

Method

Layer in the Crockpot
  1. Add the raw chicken breasts, black beans, corn, both tomatoes, both seasoning packets, chicken broth, and cream cheese cubes to the Crockpot. Stir everything except the chicken so the chicken stays mostly intact while it cooks.
Slow cook
  1. Cook on Low for 6-8 hours or on High for 3-4 hours until the chicken is tender. Visual cue: the soup will look thickened and the chicken will shred easily.
Shred and finish creamy
  1. Remove the chicken, shred with two forks, and return it to the Crockpot. Stir to distribute the shredded chicken through the soup.
  2. Stir until the cream cheese is completely melted and incorporated into the broth. Visual cue: the soup will turn creamy and uniformly colored.
  3. Stir in the heavy cream and continue mixing until smooth. Visual cue: the soup looks glossy and creamy without any visible cream cheese lumps.
Season and serve
  1. Season with salt and pepper, then stir once more to combine. Visual cue: the flavors look balanced and the broth tastes complete.
  2. Serve with shredded cheddar, sour cream, tortilla chips, jalapeños, and cilantro on top. Visual cue: toppings sit bright and fresh against the warm orange creamy broth.

Notes

For the creamiest texture, use cubed cream cheese and stir until completely melted before adding heavy cream. Store leftovers in an airtight container in the fridge up to 4 days; reheat gently on the stovetop or in the microwave, adding a splash of broth if it thickens. Freezing is not ideal because dairy can break; if you must freeze, thaw in the fridge and reheat low, then stir well. For a lighter option, use reduced-fat cream cheese and half-and-half instead of heavy cream.
