Green Bean Bundles

Green Bean Bundles are bright, tender green beans wrapped in crispy bacon and glazed with a sticky brown sugar garlic butter. Blanching keeps the beans crisp-tender, then the oven turns the bacon into a crunchy, bubbly finish.

Ingredients

Fresh green beans, trimmed
  • 1.5 lb fresh green beans Trimmed.
Bacon
  • 8 bacon Halved crosswise; wrap about 1/2 slice per bundle.
Brown sugar garlic butter glaze
  • 0.25 cup butter Melted.
  • 0.33 cup brown sugar
  • 2 garlic Minced.
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch the green beans
  1. Preheat oven to 400F. Blanch the trimmed green beans in boiling water for 3 minutes until bright green and crisp-tender.
  2. Plunge the blanched green beans into ice water and drain thoroughly. Let them drain well so the bacon crisps properly.
Wrap and bake
  1. Gather 8-10 green beans into a tight bundle and wrap each with a half slice of bacon, placing seam-side down in a baking dish. Keep the bundles snug for even browning.
  2. Whisk the melted butter, brown sugar, garlic, soy sauce, and black pepper until smooth. The glaze should look glossy and thickened slightly from the sugar.
  3. Pour the glaze evenly over the bacon-wrapped bundles. Aim to coat the top surfaces so it bubbles as it bakes.
  4. Bake at 400F for 25-30 minutes until the bacon is crisp and the glaze is bubbly. If the bacon browns too fast, tent loosely with foil.
Serve
  1. Spoon the pan glaze over the bundles. Serve warm while the bacon stays crisp.

Notes

For best texture, drain the blanched green beans completely (and pat lightly if needed) before wrapping—extra surface water can soften the bacon. Refrigerate leftovers in an airtight container up to 3 days; reheat at 350F until warmed through. Freezing is not recommended because bacon and glaze texture changes after thawing. For a lighter option, use turkey bacon and reduce butter to 2 tbsp while keeping the same glaze ratios.
