Method
Make the goat cheese base
- Beat goat cheese, cream cheese, and milk until light and smooth, scraping down as needed for even texture. The mixture should look creamy and spreadable with no visible lumps.
- Spread the mixture into a shallow serving bowl and create a swirl in the center. Make a slightly raised swirl so the topping pools nicely.
Warm the apricot honey topping
- Warm apricot preserves with honey for 20-30 seconds, then stir until loose. You should be able to pour it in slow ribbons.
- Spoon the apricot honey over the goat cheese swirl. Aim for golden trails that partially cover the center.
Finish and serve
- Top with dried apricots, pistachios, thyme, and a pinch of flaky sea salt. Finish with an even sprinkle so every bite has crunch and herb notes.
- Serve immediately with crackers or crostini. Arrange around the bowl so you can scoop straight through the topping.
Notes
Pro tip: soften the goat cheese and cream cheese fully so the spread turns smooth without grainy texture. Store covered in the refrigerator up to 3 days; for best texture, stir once before serving. Freezing isn’t recommended because the dairy can separate after thawing. For a lower-fat option, use reduced-fat cream cheese (the flavor stays similar but the spread may be slightly less rich).
