Ingredients

goat cheese
  • 8 oz goat cheese, softened
cream cheese
  • 4 oz cream cheese, softened
milk
  • 2 tbsp milk
apricot preserves
  • 0.3333333333 cup apricot preserves
honey
  • 2 tbsp honey
dried apricots
  • 0.25 cup dried apricots, finely chopped
pistachios
  • 2 tbsp pistachios, chopped
fresh thyme leaves
  • 1 tsp fresh thyme leaves
flaky sea salt
  • 1 pinch of flaky sea salt
crackers or crostini
  • 1 crackers or crostini for serving

Method

Make the goat cheese base
  1. Beat goat cheese, cream cheese, and milk until light and smooth, scraping down as needed for even texture. The mixture should look creamy and spreadable with no visible lumps.
  2. Spread the mixture into a shallow serving bowl and create a swirl in the center. Make a slightly raised swirl so the topping pools nicely.
Warm the apricot honey topping
  1. Warm apricot preserves with honey for 20-30 seconds, then stir until loose. You should be able to pour it in slow ribbons.
  2. Spoon the apricot honey over the goat cheese swirl. Aim for golden trails that partially cover the center.
Finish and serve
  1. Top with dried apricots, pistachios, thyme, and a pinch of flaky sea salt. Finish with an even sprinkle so every bite has crunch and herb notes.
  2. Serve immediately with crackers or crostini. Arrange around the bowl so you can scoop straight through the topping.

Notes

Pro tip: soften the goat cheese and cream cheese fully so the spread turns smooth without grainy texture. Store covered in the refrigerator up to 3 days; for best texture, stir once before serving. Freezing isn’t recommended because the dairy can separate after thawing. For a lower-fat option, use reduced-fat cream cheese (the flavor stays similar but the spread may be slightly less rich).
