Ingredients

Ice cream sandwiches
  • 24 rectangular ice cream sandwiches
Whipped topping
  • 16 oz whipped topping (Cool Whip) 2 tubs total
Sauces and decoration
  • 1 cup hot fudge sauce
  • 0.5 cup caramel sauce
  • 0.25 cup Rainbow sprinkles for decoration
  • 0.25 cup Oreo crumbles for decoration

Equipment

  • 1 sheet pan

Method

Layer the cake
  1. Arrange a single layer of rectangular ice cream sandwiches in a 9x13 pan. Press them gently into an even layer so the surfaces line up.
  2. Spread half of the whipped topping over the sandwiches. Use a flat spatula to smooth it into an even, thick layer.
  3. Drizzle half of the hot fudge sauce and caramel sauce over the whipped topping. Add ribbons across the top so every slice gets swirls.
  4. Arrange a second layer of rectangular ice cream sandwiches on top. Fit them snugly to cover the sauced whipped layer.
  5. Spread the remaining whipped topping to cover completely. Smooth the top fully so the decorations adhere.
  6. Drizzle the remaining hot fudge sauce and caramel sauce on top, then decorate with rainbow sprinkles and Oreo crumbles. Finish with a light, even scatter for a bright look.
Freeze and slice
  1. Freeze the cake at -0°F to 0°F for 6 hours or overnight before slicing. Let it firm up fully so the layers cut cleanly without sliding.

Notes

Pro tip: warm your spatula slightly with hot water and dry it before smoothing each whipped layer—this helps you spread without tearing the ice cream sandwiches. Refrigerate/slice immediately after freezing only; the cake is best kept frozen for up to 2 weeks. Freezing is yes—wrap slices tightly to prevent freezer burn. For a simple swap, use sugar-free whipped topping and reduced-sugar hot fudge for a lighter dessert profile.
