Make the key lime dip
- Beat the cream cheese until completely smooth, scraping the sides as needed so no lumps remain (about 1-2 minutes).
- Add sweetened condensed milk, key lime juice, lime zest, and vanilla extract, then beat until smooth and well combined (about 1 minute).
- Fold in the whipped topping until light and airy, using gentle strokes so the mixture stays fluffy.
Chill and top
- Transfer the dip to a wide serving bowl, smooth the top, and refrigerate for at least 1 hour until set (about 60 minutes).
- Mix graham cracker crumbs with melted butter, then press or sprinkle over the top of the dip so the topping adheres.
- Garnish with extra lime zest and serve immediately with graham crackers, strawberries, and apple slices for dipping.
Notes
For the smoothest texture, fully soften the cream cheese before mixing and chill the dip until it firms up, about 1 hour in the refrigerator. Store covered in the fridge for up to 3 days; for best graham-cracker topping texture, add garnish and serve within 24 hours. This dip freezes poorly due to whipped topping texture changes. Dietary swap: use reduced-fat cream cheese for a lighter version while keeping the method the same.
