Ingredients

Cranberry base
  • 12 oz fresh cranberries
  • 1.75 cup sugar
  • 1 cup water
  • 1 Granny Smith apple
  • 1 orange zested and juiced
  • 1 lemon zested and juiced
  • 0.5 cup golden raisins
  • 0.5 cup walnuts or pecans toasted and chopped

Equipment

  • 1 saucepan

Method

Simmer the cranberry mixture
  1. Bring fresh cranberries, sugar, and water to a boil in a saucepan, then reduce to a simmer for 5 minutes until the skins pop.
  2. Keep the saucepan at a steady simmer and stir occasionally so the berries cook evenly during the 5-minute period.
Add fruit and citrus
  1. Add diced Granny Smith apple, orange zest, orange juice, lemon zest, and lemon juice to the saucepan, then simmer for 15 minutes.
  2. Continue simmering until the mixture thickens to a chunky cranberry sauce texture, stirring occasionally as it reduces.
Finish and chill
  1. Remove the saucepan from heat and stir in golden raisins and toasted chopped walnuts or pecans.
  2. Let the sauce cool completely, then cover and refrigerate up to 1 week.
Serve
  1. Serve chilled or at room temperature, spooning the sauce so it stays chunky and glossy.

Notes

Pro tip: simmering until the cranberry skins pop helps create that signature chunky texture, so don’t rush the first simmer. Refrigerate in a covered container up to 1 week; freezing not recommended because the citrus and fruit texture can soften after thawing. For a less-sweet version, reduce sugar by about 1/4 cup and expect a slightly tarter sauce.
