Ingredients

goat cheese log, chilled
  • 10 oz goat cheese log Chilled for easier shaping.
cream cheese, softened
  • 4 oz cream cheese Soften to beat smooth.
bacon, cooked crisp and chopped
  • 6 slices bacon Cook until crisp, then finely chop.
pecans, toasted and chopped
  • 0.333 cup pecans Toast and finely chop.
dried cranberries, chopped
  • 0.25 cup dried cranberries Chop for even coating.
fresh chives, chopped
  • 1 tbsp fresh chives Chop finely.
honey for drizzling
  • 2 tbsp hot honey or regular honey Use hot honey if you want a gentle heat.
crackers for serving
  • 1 crackers Serve on the side for spreading.

Method

Make and shape the log
  1. Beat goat cheese log and cream cheese until smooth, then shape into a log. Aim for an even, creamy texture with no lumps.
  2. Wrap the log in plastic wrap and chill for 30 minutes until firm. This helps the log hold its shape when rolling.
Coat and finish
  1. Combine bacon, pecans, dried cranberries, and fresh chives on a plate. Toss just until evenly distributed so every bite has coating.
  2. Roll the chilled log in the mixture, pressing to coat on all sides. Rotate as you roll to cover the entire surface.
  3. Transfer the coated log to a serving board and drizzle with honey. Use a slow zigzag so the honey lands on the crispy coating.
  4. Serve the log with crackers. Cut or slice one end to show the creamy white center.

Notes

Pro tip: chop bacon and nuts fairly fine so the coating adheres and doesn’t fall off when you slice. Store wrapped in the fridge up to 3 days; the flavors set as it chills. Freeze: no, freezing can change the texture of the soft cheeses. Dietary swap: use turkey bacon for a lighter option while keeping the same rolling/coating method.
