Ingredients
  

Whole milk
  • 1 cup whole milk Use 1 cup for blending; add 1 tablespoon milk only if re-spinning needs it.
Pumpkin puree
  • 0.5 cup pumpkin puree
Cream cheese
  • 2 tbsp cream cheese, softened
Brown sugar
  • 3 tbsp brown sugar
Pumpkin pie spice
  • 1 tsp pumpkin pie spice
Vanilla extract
  • 0.5 tsp vanilla extract
Salt
  • 0.25 tsp salt
Graham crackers
  • 3 count graham crackers, crushed Crushed for the mix-in.

Method
 

Blend the cheesecake base
  1. Blend whole milk, pumpkin puree, cream cheese, brown sugar, pumpkin pie spice, vanilla extract, and salt until completely smooth with no cream cheese lumps visible.
Freeze and process in Ninja Creami
  1. Pour the mixture into the Ninja Creami pint container and freeze for 24 hours, until solid throughout with no slushy center.
  2. Process on the Ice Cream setting; if the texture is too soft or not fully churned, re-spin with 1 tablespoon milk until it looks thick and scoopable.
Add mix-in and serve
  1. Use the Mix-In function to fold in the crushed graham crackers so you see evenly distributed crumb bits.
  2. Top with whipped cream and dust with cinnamon, finishing with a light, warm-spice speckled surface.

Notes

For the smoothest cheesecake texture, make sure the cream cheese is truly softened before blending so it disappears completely. Keep leftovers in the freezer in the pint (press plastic wrap directly on the surface) for up to 2–3 days; freeze longer is possible but may get icier. Freezer yes after processing, but avoid repeated melt/refreeze cycles. If you want a lighter option, use low-fat cream cheese and reduce the brown sugar slightly to maintain the flavor balance.
