Slice and combine the fruit
- Slice the peaches and add them to a large serving bowl along with the blueberries, raspberries, strawberries, and watermelon.
- Toss the fruit gently to distribute it evenly through the bowl.
Make the honey-lime dressing
- Whisk the honey, lime juice, lime zest, and vanilla extract until smooth.
Dress, chill, and garnish
- Drizzle the honey-lime dressing over the fruit and toss gently until every piece is coated.
- Taste and add more honey or lime juice as desired, then toss again briefly to recoat.
- Refrigerate for 20 minutes before serving.
- Garnish with fresh mint leaves just before serving.
Notes
For the best texture, slice peaches right before assembling so they stay juicy and hold their shape. Store covered in the refrigerator up to 2 days; the berries will soften slightly. Freezing is not recommended. For a lighter option, use agave or maple syrup in the same amount to keep it dairy-free and lower-glycemic.
