Notes

For the thickest, scoopable texture, use hash browns that are fully thawed and not watery, and keep the bake time in the 50–55 minute window so the edges bubble but the center stays creamy. Store leftovers covered in the refrigerator up to 4 days; reheat in the oven or microwave until hot. Freeze is not recommended because the dairy may break after thawing. For a lighter option, swap sour cream for a plain low-fat Greek yogurt and use reduced-fat cheddar (it will be slightly softer but still bake well).
