Prep and season
- Preheat the oven to 425°F and line a sheet pan with parchment. Make sure the oven is fully preheated so the carrots roast, not steam.
- Toss the carrots with olive oil and ranch seasoning until evenly coated. Keep tossing until every stick looks lightly speckled and glossy.
- Spread the carrots in a single layer on the prepared sheet pan. Leave space between sticks so they brown at the edges.
Roast and finish
- Roast for 20-25 minutes, tossing halfway, until tender and browned at the edges. Watch for caramelized spots along the stick edges.
- Sprinkle the roasted carrots with Parmesan and the fresh dill or parsley, then serve warm. The heat helps the cheese melt slightly and cling to the carrots.
Notes
For the best browning, don’t overcrowd the sheet pan—use two pans if needed. Store leftovers in an airtight container in the refrigerator for up to 4 days; rewarm on a sheet pan at 425°F for 5-8 minutes. Freezing is not recommended because the texture of the carrots softens. If you want a dairy-free option, use a dairy-free Parmesan-style topping or skip the Parmesan and add an extra pinch of ranch seasoning and chopped herbs.
