Ingredients

Roasted vegetables mixture
  • 1.5 lb baby potatoes quartered into bite-size cubes for crisp edges
  • 3 carrots sliced into 1/2-inch coins
  • 2 zucchini cut into 1-inch chunks
  • 0.25 cup olive oil divided; 3 tbsp used for potatoes/carrots and the remainder for zucchini
  • 3 garlic minced
  • 1 tsp dried Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup grated Parmesan
  • 1 tbsp fresh parsley chopped

Equipment

  • 1 sheet pan

Method

Roast the potatoes and carrots
  1. Preheat the oven to 425F so it’s fully hot before the vegetables go in.
  2. Toss the baby potatoes and carrots with 3 tablespoons olive oil, garlic, Italian seasoning, salt, and black pepper on a sheet pan until evenly coated.
  3. Roast for 20 minutes at 425F, then look for potatoes starting to brown at the edges.
Add zucchini and finish roasting
  1. Toss the zucchini with the remaining olive oil, then add to the pan and stir to distribute across the surface.
  2. Roast 15 minutes more at 425F until the potatoes are crispy and the zucchini is tender.
Finish and serve
  1. Sprinkle the roasted potatoes, carrots, and zucchini with grated Parmesan and chopped parsley, then serve while hot with visible browned spots.

Notes

For extra crisp potatoes, spread everything into a single layer and avoid stirring during the first 20 minutes. Store leftovers in an airtight container in the fridge up to 3 days; reheat on a sheet pan at 425F until warmed and lightly re-crisped. Freezing isn’t recommended due to zucchini texture. Dietary swap: use nutritional yeast instead of Parmesan for a dairy-free option.
