Method
Roast the potatoes and carrots
- Preheat the oven to 425F so it’s fully hot before the vegetables go in.
- Toss the baby potatoes and carrots with 3 tablespoons olive oil, garlic, Italian seasoning, salt, and black pepper on a sheet pan until evenly coated.
- Roast for 20 minutes at 425F, then look for potatoes starting to brown at the edges.
Add zucchini and finish roasting
- Toss the zucchini with the remaining olive oil, then add to the pan and stir to distribute across the surface.
- Roast 15 minutes more at 425F until the potatoes are crispy and the zucchini is tender.
Finish and serve
- Sprinkle the roasted potatoes, carrots, and zucchini with grated Parmesan and chopped parsley, then serve while hot with visible browned spots.
Notes
For extra crisp potatoes, spread everything into a single layer and avoid stirring during the first 20 minutes. Store leftovers in an airtight container in the fridge up to 3 days; reheat on a sheet pan at 425F until warmed and lightly re-crisped. Freezing isn’t recommended due to zucchini texture. Dietary swap: use nutritional yeast instead of Parmesan for a dairy-free option.
