Smothered Green Beans

Smothered green beans are baked until tender in a glossy brown sugar butter sauce with bacon and onions. The method layers bacon drippings over green beans, then bakes covered until the sauce turns shiny and spoonable.

Ingredients

canned cut green beans, drained
  • 4 can (14.5 oz) cut green beans drained
bacon
  • 8 slice bacon chopped
onion
  • 0.5 small onion diced
brown sugar butter sauce
  • 0.5 cup brown sugar packed
  • 0.25 cup butter melted
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Preheat
  1. Preheat the oven to 350F. Set out a 9x13-inch baking dish so the beans are ready to layer.
Cook bacon and onion
  1. Cook the chopped bacon and diced onion in a skillet for 8 minutes until the bacon is mostly crisp, keeping the drippings in the pan. Do not drain.
Assemble the beans
  1. Place the drained cut green beans in a 9x13-inch baking dish and top with the bacon, onion, and drippings from the skillet. Spread into an even layer.
  2. Whisk together the packed brown sugar, melted butter, soy sauce, garlic powder, and black pepper until smooth. Pour the sauce evenly over the beans.
Bake
  1. Cover the baking dish with foil and bake for 35-40 minutes at 350F. Stir once during baking to help the sauce coat the beans.
  2. Continue baking until the sauce is glossy. Use the stir as a visual cue—once shiny and thick, the beans are ready.
Serve
  1. Stir the beans and serve warm. Spoon the sauce that pools around the green beans for best coating.

Notes

For the glossiest sauce, stir once midway so the brown sugar butter redistributes before it sets. Refrigerate leftovers in a sealed container for up to 4 days; reheat in a covered dish at 325F until hot. Freezing is not recommended because canned green beans can soften further when thawed. If you want a lower-sodium option, use reduced-sodium soy sauce and keep the garlic powder and pepper the same.
