Ingredients

Bacon
  • 6 slices bacon
Onion
  • 1 yellow onion
Cabbage
  • 1 green cabbage
Garlic
  • 2 cloves garlic
Butter
  • 2 tbsp butter
Salt and pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
Spices and sweetener
  • 0.25 tsp red pepper flakes
  • 1 tsp sugar
Acid
  • 1 tbsp apple cider vinegar

Equipment

  • 1 cast iron skillet

Method

Fry the bacon base
  1. Cook the bacon in a large skillet over medium heat for 8 minutes until crisp, then remove and leave the drippings in the pan. Visual cue: bacon should look browned and crisp, and the pan will have rendered fat.
  2. Add the onion to the same skillet and cook for 5 minutes, stirring occasionally until softened. Visual cue: onion should turn glossy and slightly translucent.
  3. Stir in the garlic and cook for 30 seconds. Visual cue: garlic becomes fragrant without browning.
Caramelize the cabbage
  1. Add the cabbage, butter, salt, black pepper, red pepper flakes, and sugar to the skillet. Stir to coat the cabbage so the butter and seasonings cling to the leaves.
  2. Cook for 12-15 minutes, stirring occasionally, until the cabbage is tender and caramelized at the edges. Visual cue: you should see golden-brown spots on the cabbage and sizzling in the drippings.
Finish and serve
  1. Stir in the apple cider vinegar to brighten the flavor. Visual cue: a quick sizzle should lift the aroma.
  2. Add the crispy bacon back to the skillet and stir to combine, then serve warm. Visual cue: bacon pieces should be evenly distributed throughout the cabbage.

Notes

For the best caramelized edges, use a large skillet so the cabbage can sizzle rather than steam; stir only occasionally during the 12-15 minute cook. Store leftovers in the refrigerator up to 3-4 days in an airtight container and reheat in a skillet over medium heat until warmed through. Freezing isn’t recommended for best texture. For a lighter option, use turkey bacon while keeping the same cook times and drippings method.
