Ingredients

Spiced cider
  • 1 cup apple cider
  • 2 cinnamon sticks
  • 2 star anise
  • 3 whole cloves
  • 2 tbsp brown sugar
Drink assembly
  • 1 bottle (750 ml) prosecco, chilled
  • 1 apple, thinly sliced
  • 1 Cinnamon sugar for the rims

Method

Make the spiced cider
  1. In a saucepan, simmer apple cider, cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, keeping the mixture at a steady simmer.
  2. Remove from heat, strain the spiced cider through a fine strainer, and chill completely.
Assemble the prosecco flutes
  1. Rim each flute with cinnamon sugar so the sugar clings evenly to the glass edges.
  2. Pour 2 tablespoons of spiced cider into each flute.
  3. Top each flute with chilled prosecco, garnish with an apple slice, and serve immediately.

Notes

Pro tip: chill the spiced cider until fully cold so the flavors stay layered when prosecco is added. Refrigerate the strained spiced cider up to 4 days; freeze is not recommended because the spices can dull after thawing. For a lighter option, use a lower-sugar brown sugar substitute (or reduce brown sugar to 1 tbsp) while keeping the simmer time the same.
