  • 2 tbsp high-quality matcha powder Use culinary matcha for best color and flavor.
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup unsalted butter Soften to room temperature.
  • 0.75 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 gallon strawberry ice cream Use strawberry ice cream; soften for easy sandwiching.
  • 0.25 white sesame seeds More as needed for rolling.

Method
 

Make the matcha cookies
  1. Preheat oven to 350F, then whisk all-purpose flour, matcha powder, baking soda, and salt together in a bowl.
  2. Beat unsalted butter and granulated sugar until fluffy, then beat in egg and vanilla extract until smooth.
  3. Stir in the flour-matcha mixture until a smooth, vivid green dough forms.
  4. Scoop dough into large rounds and press flat on lined baking sheets.
  5. Bake for 10-12 minutes until the edges are set while the cookies stay vivid green, then cool completely.
Assemble and freeze
  1. Scoop and sandwich softened strawberry ice cream between two matcha cookies to form an even filling.
  2. Roll the ice cream edge in white sesame seeds so it coats the sides.
  3. Wrap the sandwiches and freeze for at least 2 hours before serving.

Notes

For the cleanest sandwiches, cool the cookies fully before assembling so the ice cream doesn’t melt into the edges. Store wrapped sandwiches in the freezer up to 2 weeks; freeze yes (recommended) and thaw briefly in the fridge for 3-5 minutes before biting. If you want a dairy-light option, use dairy-free strawberry ice cream and proceed the same way with the matcha cookies.
