Baked Feta Roast Potatoes

Baked feta roast potatoes are a Mediterranean-style side dish where halved baby potatoes roast until golden while a feta block softens and caramelizes alongside cherry tomatoes and garlic. Finish with lemon juice, zest, and fresh herbs, then break the feta into the potatoes for a creamy, tangy coating.

Feta cheese
  • 7 oz feta cheese
Cherry tomatoes
  • 1 cup cherry tomatoes
Garlic
  • 5 garlic cloves smashed
Olive oil
  • 1 cup olive oil
Oregano
  • 1 tsp dried oregano
Thyme
  • 1 tsp fresh thyme
Red pepper flakes
  • 0.5 tsp red pepper flakes
Lemon
  • 1 lemon zested and juiced

Black pepper
  • 0.25 tsp black pepper to taste

  • 1 sheet pan

Method

Prep and season
  1. Preheat the oven to 400F and place the feta block in the center of a baking dish.
  2. Arrange the halved baby potatoes, cherry tomatoes, and smashed garlic around the feta.
  3. Drizzle everything with olive oil, then sprinkle oregano, thyme, red pepper flakes, salt, and pepper evenly over the pan.
Roast and finish
  1. Roast for 40-45 minutes until the potatoes are golden and tender, and the feta is softened and golden.
  2. Squeeze lemon juice over the roasted potatoes, then scatter lemon zest and fresh basil or parsley.
  3. Break the feta into the potatoes and toss everything together until coated.

Notes

Pro tip: Use a baking dish that fits everything snugly so the potatoes roast around the feta block instead of steaming. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 400F oven until warmed through. Freezing is not recommended because the feta and potatoes can change texture. For a lighter option, use part-skim feta and reduce olive oil slightly while still seasoning generously.
