Ingredients

Brownie
  • 1 box brownie mix Use two 9-inch rounds; baked and cooled, or homemade brownie baked in two 9-inch rounds.
Ice cream layer
  • 0.5 gallon vanilla ice cream Softened so it spreads in a thick, even layer.
Hot fudge
  • 1 cup hot fudge sauce Divided: drizzle 1/2 cup between each brownie layer.
Whipped topping
  • 1 cup whipped cream For topping just before serving.
Topping
  • 0.25 chocolate shavings For topping.

Equipment

  • 1 springform pan
  • 1 sheet pan

Method

Bake and cool the brownie layers
  1. Bake the brownie mix in two 9-inch round pans, following package directions, until set and a tester comes out with moist crumbs (30 minutes at the mix’s specified baking temperature). Cool completely so the layers don’t melt the ice cream.
Assemble the frozen cake
  1. Place one cooled brownie round into a 9-inch springform pan (flat side up). Drizzle 1/2 cup hot fudge over the surface to form a glossy layer.
  2. Spread a thick, even layer of softened vanilla ice cream over the hot fudge (use firm, press-and-spread strokes). Keep it level so the next brownie round sandwiches evenly.
  3. Drizzle the remaining hot fudge over the ice cream layer (about 1/2 cup). Use gentle ribbons so you get a visible fudge ripple throughout.
  4. Place the second brownie round on top and press gently to create even contact. Avoid sliding the top layer to keep the fudge layers intact.
Freeze and finish
  1. Freeze the assembled cake for at least 8 hours or overnight (0°F / -18°C). It should feel firm all the way through when pressed with a fingertip through a glove.
  2. Top with whipped cream and chocolate shavings right before serving. Keep the cake cold so the topping holds its shape.

Notes

For the cleanest slices, run the springform bottom under warm water for 10–15 seconds before removing the ring, then use a hot knife and wipe between cuts. Store covered in the freezer for up to 2 weeks; for best texture, avoid repeated thawing and refreezing. Freezer: yes—freeze assembled (after assembly) for the 8-hour minimum. Dietary swap: use dairy-free vanilla ice cream and dairy-free whipped cream to make it lactose-free.
