Ingredients

Gluten-Free Fritter Batter
  • 1.5 cup gluten-free all-purpose flour blend
  • 0.25 cup granulated sugar
  • 2 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt
  • 2 eggs
  • 0.5 cup oat milk or almond milk
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 2 cups apples, peeled and finely diced
  • cooking spray
Cinnamon Vanilla Glaze
  • 1 cup powdered sugar
  • 2 tbsp oat milk
  • 0.5 tsp vanilla

Equipment

  • 1 Air fryer

Method

Make the batter
  1. Whisk gluten-free all-purpose flour blend, granulated sugar, baking powder, cinnamon, nutmeg, and salt in a bowl until evenly combined.
  2. In a separate bowl, whisk eggs, oat milk or almond milk, melted coconut oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and fold until no dry streaks remain.
  4. Fold in diced apples, then rest the batter for 5 minutes to hydrate the flour.
Air-fry the fritters
  1. Preheat the air fryer to 370F.
  2. Line the basket with parchment, then spray it with cooking spray.
  3. Drop 3-tablespoon portions of batter into the basket, flatten slightly, and spray the tops with cooking spray.
  4. Air fry for 6 minutes, then flip the fritters so both sides brown.
  5. Air fry for an additional 4 to 6 minutes, until the fritters are golden on both sides.
Glaze and serve
  1. Whisk powdered sugar, oat milk, and vanilla until smooth and drizzleable.
  2. Drizzle the glaze over the warm fritters right before serving.

Notes

Pro tip: dice the apples very small so they cook through during the short air-fry time. Store leftover fritters in the refrigerator for up to 3 days and reheat in the air fryer or toaster oven at 350F until warmed. Freezing: freeze unglazed fritters in a single layer for up to 2 months; thaw and rewarm, then glaze. If you want dairy-free, use plant-based milk for both the batter and glaze (already compatible with oat milk or almond milk).
