Ingredients
  

Brownie mix
  • 1 box brownie mix Use the mix called for a 9-inch pan.
  • 1 tbsp instant espresso powder Mixed into the brownie batter.
  • 0.25 cup espresso or strong coffee Brush over cooled brownies.
Coffee ice cream
  • 0.5 gallon coffee ice cream Soften before spreading.
Ganache
  • 1 cup dark chocolate ganache Pour over the frozen cake.
Whipped cream
  • 2 cups whipped cream Pipe around the edge and on top.
Decoration
  • 1 chocolate-covered espresso beans Decorate the top.

Method
 

Bake and cool the espresso brownies
  1. Preheat the oven to the brownie mix package temperature and bake the brownie mix batter for 30 minutes, using instant espresso powder mixed in for an espresso-spiked flavor. Visual cue: the center should look set and the edges should pull slightly from the pan.
  2. Cool the brownies completely in the 9-inch springform pan before brushing. Visual cue: the brownie surface should be fully cool to the touch with no steam rising.
  3. Brush the completely cooled brownies with 1/4 cup espresso or strong coffee. Visual cue: you’ll see a light, glossy damp sheen on top.
Freeze the coffee ice cream layer
  1. Spread the softened coffee ice cream over the brushed brownies and smooth the top evenly. Visual cue: the brownie layer disappears under a uniform pale coffee-ice-cream surface.
  2. Freeze for 4 hours to firm the ice cream. Visual cue: the surface should look solid and matte, not soft or wavy.
Add ganache and finish
  1. Pour the dark chocolate ganache over the frozen cake and tilt the pan to cover the top. Visual cue: the ganache forms a smooth, dark layer with no visible ice cream peeking through.
  2. Freeze for 2 more hours to set the ganache. Visual cue: the ganache should look fully set and slightly firm when touched near the edge.
  3. Pipe whipped cream around the edge and on top for a defined border. Visual cue: swirls hold shape and don’t slump.
  4. Top with chocolate-covered espresso beans as decoration. Visual cue: espresso beans are evenly scattered across the whipped cream.
  5. Freeze until serving to keep all layers cleanly sliced. Visual cue: a knife inserted should come out cold and the slice edges should stay intact.

Notes

Pro tip: freeze the brownie base fully before adding ganache so the ganache doesn’t melt into the ice cream. Store covered in the freezer up to 3 months; thaw in the refrigerator 10–15 minutes before slicing for cleaner cuts. For a lighter option, swap whipped cream for stabilized whipped topping to hold the piped border without weeping.
