Ingredients
  

Fruit filling
  • 3 large apples, peeled and sliced
  • 3 ripe pears, peeled and sliced
  • 0.3333333333 cup granulated sugar
  • 2 tbsp brown sugar
  • 1.5 tsp cinnamon
  • 0.25 tsp ginger
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
Walnut crumble topping
  • 1 cup rolled oats
  • 0.75 cup all-purpose flour
  • 0.75 cup brown sugar, packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 1 cup walnuts, roughly chopped
  • 0.75 cup cold unsalted butter, cubed

Method
 

Preheat & prep
  1. Preheat oven to 375F and grease a 9x13 baking dish so the fruit doesn’t stick.
Make the fruit filling
  1. Toss apple and pear slices with granulated sugar, brown sugar, cinnamon, ginger, cornstarch, and lemon juice, then spread evenly in the dish so everything coats the fruit.
Make the walnut crumble
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, salt, and chopped walnuts, then cut in cold cubed butter until chunky clumps form for a crisp topping texture.
Bake & rest
  1. Scatter the walnut crumble over the fruit, then bake 40-45 minutes at 375F until the top is deeply golden and the fruit is bubbling.
  2. Rest 10 minutes before serving so the filling thickens and slices stay intact.

Notes

For the crispiest top, keep the butter cold while rubbing/cutting it into the dry ingredients so clumps bake up crunchy. Store covered in the refrigerator up to 4 days; reheat at 350F until warmed through. Freezing is not recommended for best crumble texture. If you want a lighter option, use reduced-sugar granulated sugar in the filling and keep the topping ingredients the same for a similar crunch.
